Ingredients:
- 500 grams of potatoes, thinly sliced
- 2 bay leaves
- 1 segment of galangal, grated
- 1sm of granulated sugar
- 1 tsp salt
Ground spices:
- 3 garlic cloves
- 4 red onion cloves
- 5 cayenne fruit
- 4 red chillies
- 5 mL of concentrated tamarind juice
How to make:
1. Fry the sliced potatoes and wash them over medium heat. When the potatoes begin to turn yellow (half cooked), remove and drain. Enlarge the heat of the stove, re-fry the potatoes until they are brownish yellow. Lift and drain.
2. Saute the spices that have been mashed until fragrant and dark red, add sugar and salt, mix well and add a little water.
3. Allow the water to recede and the chilli to thicken, then enter the potato chips.
